We don’t have small children, so Easter isn’t a holiday we celebrate in a big way. But I do like to make a nice dinner, and some years we have family come by to share it with us. I don’t have a set menu, but in past years I have done a honey ham, braised lamp chops with mint or rosemary, French potato salad with new potatoes (it has a light mustard, vinegar and tarragon dressing), fried early mushrooms, and minted peas with pearl onions. I like to serve a light wine such as riesling. Table decor is simple– a white tablecloth with my Blue Willow china, and an early flower like hyacinth or crocus in a milk glass planter. For dessert, I usually make a fruit galette. It’s a relaxing, nice dinner that makes the day extra special.
